Grilled Lobster with Basil
Ingredients
8 (1.5 lb/750 g) live lobsters
1 cup (250 mL) chopped fresh basil
1 cup (250 mL) melted butter
Pepper, to taste
Preparation
Preheat oven to 400 °F (200 °C).
Fill large saucepan with water and bring to boil. Plunge lobsters, 2 at a time, headfirst into boiling water and cook for 4 minutes. Remove from boiling water and set aside. Repeat 3 times. Halve lobsters lengthwise.
In small saucepan of boiling water, blanch basil for 20 seconds. In blender, purée basil with butter, until smooth.
Brush lobster meat with half basil butter mixture. Place on dripping pan and bake for 20 minutes.
Before serving, brush lobster meat again with basil butter. Pepper to taste. Serve hot and garnish with fresh parsley.
